There’s just something about the early morning, isn’t there? The cool air coming from a cracked window, the birds singing high in the trees, the sun slowly illuminating the sky, a new day beginning. The calm before the storm, it must be.
For me, this time of day is perfectly accompanied by a warm cup of tea and a homemade muffin. These banana oat muffins are delightful, warm and drizzled with honey, they are a perfect start to any day. Try them soon!
Banana Oat Muffins
1 1/2 cups all-purpose flour (or half white/half wheat)
1 cup rolled oats
1/4 cup white sugar
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup mashed bananas
Combine flour, oats, sugar, baking powder, soda, and salt in a medium bowl
In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.Bake at 400 degrees F for 18 to 20 minutes.
Yum! Looks pretty perfect. And I love early mornings too - definitely calm before the storm.

ReplyDeleteI made these this morning. While they were very good, I might suggest adding in some chopped nuts (walnuts work well) to add some texture and crunch. For some reason, I always needs that nutty flavor when something has bananas in it too.
ReplyDeleteAlso - don't forget to spray your paper bake cups with Pam! I forgot for my first batch and we ended up losing a lot of muffin to those cups. Pam makes a great baking spray that has flour in it - recommended.
I made these yesterday, and they might be the best muffins I've ever had! The only thing I changed was using buttermilk instead of regular (I had some I needed to use up)

These are so yummy! Started making these around 12:30 in the morning here (Mississippi) had such a urge! I have been looking for a healthy muffin recipe for quite some time that consists of bananas and oat, and oh have I found one! Your recipe is awesome and will be a staple every morning when I don't have much time to eat! I did add walnuts, a couple sprinkles of cinnamon, & more mashed bananas. Thank you for this recipe!
ReplyDeletePOOOOPIES! I just made these muffins & had high hopes... I followed the recipe "to the T" (except I had to use Canola oil vs vegetable oil). I baked them for approx. 17min's @ 400 (I have a Kenmore electric oven). Unfortunately, they smelled & looked better than they actually tasted.
ReplyDeleteThey came out very thick & dry (I did not pack down the flour) and not very flavorful at all (could barely detect banana taste) -pretty bland (bananas were heavily speckled brown, and all ingredients used were fairly fresh). I used Trader Joe's all-purpose flour. I measured the flour first, then sifted it into the bowl. Not sure if this matters.
Pretty much needed a GIANT glass of water to try to wash them down and not choke on them - sort of like peanut butter. I never bake - and THIS is why... seems like every time I try my darndest to bake something, it never comes out. User error?? Rookie mistakes?? I dunnno. I followed the recipe exactly. Thoughts??? I have wasted SO much money trying to follow recipes that just never seem to come out right. Signed, Frustrated in CA : ((
