Mmm, chocolate chip cookies!



For a baker, I don’t have much of a sweet tooth. Not to say that I don't like sweets, they just aren't my very favorite thing. My list of favorite things to eat goes like this:

1. Cabbage
2. Collard Greens
3. Honeycrisp Apples
4. Bacon
5. Cookies



I know! Cookies are the only sweet thing on the list (other than those honeycrisp apples, which are so, so delicious, be still my heart!). Cookies are also my least favorite thing to bake:

1. Cake
2. Pie
3. Everything else
4. Cookies

Cookies and I just don’t agree! I always either burn them, they spread out too thin, fall apart, too dry, something always happens. I don’t understand why! But if I conquer pie crust, I can conquer cookies, for sure.



But in the meantime, here's only cookie recipe that always works well for me. I love it! It makes the most delicious salty/sweet chocolate chip cookies. I’ve posted them here before, ages ago, but they are definitely worth a repost. Have a couple with a big glass of milk!



Chocolate Chip Cookies
from Baking Basics and Beyond

makes about 4 dozen

2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup solid vegetable shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 1/2 teaspoons vanilla
1 egg
1 cup semisweet or milk chocolate chips
1 cup white chocolate chips (optional)
1/2 cup chopped pecans (optional)

Heat oven to 375 with oven rack in the middle

Mix flour, baking soda, and salt together in a medium bowl.

Beat butter, shortening, brown sugar, and granulated sugar in bowl of a stand mixer on Medium-High speed until creamy, scraping down bowl once or twive.
Add vanilla and egg and mix well.

Reduce mixer speed to Low and add the flour mixture. Scrape down sides of bowl and beat until dough forms. By hand, stir in chocolate chips, white chocolate chips, and pecans.

Drop dough in rounded tablespoon about 2 inches apart onto an ungreased cookie sheet.

Bake 8 to 10 minutes until cookies are browned on edges.

  1. Swap ice cream for cookies, and your list could be mine! I almost count down the days until Honeycrisp season.

    My boys and husband though, they are cookie fiends. I am always on the lookout for another to try, so thank you for sharing these. Gorgeous, as always.

    That recipe looks very similar to the one I use which is out of the Better Homes & Gardens "red and white" cookbook, I'm sure you know the one... it's the only one that works for me.

  4. you know, I have never done any other recipe but the Toll House for ccc but you might have me talked into giving these a shot.

    Cookies are my FAVORITE as well (mm, next to apple pie)

  7. Hey Hannah! Maybe your unluck with cookies could be your baking mentality in plopping perfect tablespoon-sized dough onto the pan...those suckers heap over the scoop and I never have as many as the recipes say I should, but they always come out awesome. Just adjust cooking time according to the "light brownness" of the edges to be sure they are done all the way through (I usually don't even have to add any time to the original recipe). Wow, look at me giving baking advice unsolicited and from a casual baker. I just want to help out with the cookie success! Great pics as always. =]

  9. So I thought I'd also share the recipe I've used for cookies, coming from Betty Crocker's Big Red Cookbook. Somehow it's always worked out, despite my being a novice, and they are so good!

    3/4 cup granulated sugar
    3/4 cup packed brown sugar
    1 cup butter or stick margarine, softened
    1 tsp vanilla
    1 large egg
    2 1/4 cup baking soda
    1/2 tsp salt
    1 cup coarsly chopped nuts
    1 bag (12 oz/2 cups) semisweet chocolate chips

    1. Heat oven to 375.
    2. Beat sugars, butter, vanilla and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt (dough will be stiff). Stir in nuts and chocolate chips.

    3. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.

    4. Bake 8-10 minutes or until light brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

    That recipe should read:

    2 1/4 cups all-purpose flour
    1 tsp baking soda

    Sheesh...you can tell I never type out recipes for a reason!

  17. Those cookies look fantastic. You see I love to make cookies - it's cakes that don't excite me - but that's because I'd rather eat cookies than cake. Of course I don't think I've ever turned down cake.

  25. I love your lists Hannah! On the first one, just reverse everything for me. On the second, we agree. Cookies are a pain to make but they are so appreciated! My favorite recipe has rolled oats in it.

    Your chocolate chip cookies look wonderful in your photo with that adorable little bottle of milk. Don't see too many glass bottles any more!

  28. HELP!!!!Your cookies look so good that I had to try it. For some reason mines did not come out like yours. I used a tbsp scooper like the one in your photo, but the dough did not spread like yours in the oven =(. What's your secret to making them spread??

  30. Kitkat: did you beat your sugar and butter well? if it wasn't well incorporated, that could lead to less spread.

    also, if you dough was too cold, that could case them to spread less.

    i'm not sure how else to help, my cookies always spread too much! haha

  31. Your cookies look beautiful... Perhaps it is a bit of a blessing to not have much of a sweet tooth. I definitely have a sweet tooth, and I eat far too many sweets, especially since I love to bake! I must say, for someone who doesn't like to bake cookies, yours look wonderful!
